I Want Pancakes...but hold the Poison
This past weekend I decided I was in a mood for pancakes, so I went to the store to pick up a few ingredients. I generally keep the pantry well stocked, and have all the basics for cooking and baking. I needed some fresh fruit, juice, and milk. I saw a box of organic buttermilk pancake mix. I glanced at the giant box of Bisquick pancake mix nearby, and my mind imagined that it was teeming with chemicals and bad things, and with that my mind was made up. My hand gravitated toward the box of organic pancake mix, which I rationalized when I saw it was also on sale! Excellent, I thought, organic AND on sale. I already had a bag of organic flour back home, but for some reason I wanted to use the mix. My mind was made up- this seemed like a much easier option for me.
Back home I assembled all my organic ingredients: soy milk, eggs and vegetable oil. I had my secret plan to make the world's healthiest pancakes...
Drawing on my skills back from childhood chemistry class, I carefully mixed everything, precisely as indicated by the instructions.
OK they weren't perfectly shaped, but who cares, that made them more charming, I thought. Soon they were done-just in time to quell my gurgling stomach.
I added a touch of organic pure maple syrup, peeled an organic orange and I was good to go! It was a delicious breakfast and hit the spot. It sure is easy cutting out all those chemicals and junk. I am a culinary GENIUS! (cue evil laugh: Mmmmuuuhhhahhhaa!)

ReplyDeleteI love pancakes, well, crepes actually (Crepes Suzette anyone???) and I've recently discovered something that I will miss very much when I come back to the US: "oatcakes" which are actually very light crepe style pancakes made in Staffordshire:
Staffs Oatcakes
They feel healthy and go well with sweet or savoury fillings. Personally I like to roll them up with butter and honey (more so than maple syrup).

ReplyDeleteHaha, even if they aren't perfectly shaped, they look delicious! In fact, they look even better not being exactly round because they have character.
ReplyDeleteI don't know why "having character" sometimes has a negative feel to it (Q. Is he handsome? A. I'd say his face has character), but I mean that in the best way.

ReplyDeleteThough I am not a hippie, I do love organics. They don't taste any different. Except the peanut butter- it's way different than the man-made chemically stuff. I like the latter more because it's not all oily (that I can see).

ReplyDeleteLooks good. My wife and I recently signed up for a CSA box through Be Wise Ranch here in San Diego. We got our first box of organic fruits and vegetables last week. They were fantastic.
